Ingredients:

For the Dough:

- 2 cups all-purpose flour

- 1 packet (7g or 2 1/4 tsp) active dry yeast

- 1 tablespoon sugar

- 1/2 teaspoon salt

- 1 cup lukewarm water

- 1/2 cup lukewarm milk

- 1 tablespoon olive oil

- Vegetable oil (for frying)


For the Honey Syrup:

- 1 cup honey

- 1/2 cup water

- 1/2 cup sugar

- 1 cinnamon stick

- 1 tablespoon lemon juice


For Garnish:

- Ground cinnamon (for sprinkling)

- Chopped walnuts or pistachios (optional)


Instructions:

1. Prepare the Dough:

  - In a small bowl, dissolve the yeast and sugar in the lukewarm water. Let it sit for about 5-10 minutes until it becomes frothy, indicating the yeast is active.

  - In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, lukewarm milk, and olive oil.

  - Mix the ingredients together until you have a smooth, sticky dough. You can use a wooden spoon or your hands. The dough should be somewhat elastic.

  - Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.


2. Prepare the Honey Syrup:

  - While the dough is rising, prepare the honey syrup. In a medium saucepan, combine the honey, water, sugar, cinnamon stick, and lemon juice.

  - Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes until it thickens slightly.

  - Remove from heat and set aside to cool. Discard the cinnamon stick before using.


3. Fry the Loukoumades:

  - Once the dough has risen, heat vegetable oil in a deep fryer or a large, deep pot to 350°F (175°C). The oil should be deep enough to allow the dough balls to float freely.

  - Using a teaspoon, scoop small portions of the dough (about the size of a walnut). You can also use a small ice cream scoop. Dip the spoon in water before each scoop to prevent the dough from sticking.

  - Carefully drop the dough balls into the hot oil, frying them in batches. Fry each batch for about 3-4 minutes, turning occasionally, until the loukoumades are golden brown and crispy on all sides.

  - Remove the fried loukoumades with a slotted spoon and drain them on paper towels to remove excess oil.


4. Coat the Loukoumades:

  - Once all the loukoumades are fried, place them in a large bowl. Pour the warm honey syrup over the loukoumades and gently toss to ensure they are well coated.

  - Transfer the loukoumades to a serving platter. Sprinkle them generously with ground cinnamon and, if desired, chopped walnuts or pistachios.


5. Serve:

  - Serve the loukoumades immediately while they are still warm and crispy. They are best enjoyed fresh, but leftovers can be reheated in the oven.
